Chinese Prawn Omelet

Ingredients
2 free range eggs1 teaspoon soy saucefew drops of sesame oilpepper2 teaspoons grapeseed oil2 tablespoons sliced onion1/4 cup beansprouts1/2 shallot (green onion), chopped3 large raw/green prawns, blanched and cut in half 1 teaspoon oyster saucefreshly cracked pepper
Directions
1. In a bowl, whisk the eggs then season with soy sauce, sesame oil and pepper.
2. Heat a pan or wok until very hot and add in grapeseed oil. Fry the sliced onion and beansprouts, and when the onion is softened then pour in the egg mixture. Move the omelet around with a wooden spoon to let the liquid escape.
3. While the eggs are still runny in the middle, add prawns and spring onion to one side and fold the omelet in half and allow the omelet to sit in the pan over low heat for 2 minutes.
4. To serve, drizzle the omelet with oyster sauce and freshly cracked pepper.
