Rooty Casserole

Ingredients
Sweet potato, 550 gram Carrots, raw, 450 gram Chicken or Vegetable Broth, 2 cup Butter, salted, 2 tbsp Coconut Oil, 2 tbsp Yams, 300 gram Turnips, 400 gram Beets, fresh, 250 gram (or one can, drained wt) Onions, raw, 200 gram Garlic, 30 gram Thyme, 1 teaspoon driedSalt & Pepper to taste
Directions
Chop all the veggies into dice-sized cubes. Put in a large casserole dish. Pour broth over vegetables and dot with butter and coconut oil. Sprinkle on salt, pepper and thyme.

Bake at 350about 45 minutes
