Almond crusted Tilapia

4 Tilapia fillets4 Tbsp Fat Free Mayo2 Tbs Honey3 tsp Mustard - any kind, I prefer stone ground or brown.1/2 Cup Almonds, ground
Mix Mayo, honey and mustard.
Place tilapia in pan coated with cooking spray.
Spread half of the mayo mixture over the tilapia.
Sprinkle half of the almonds on top and pat down into the mayo.
Flip fillets over and cover with remaining mayo mixture and almonds
bake at 350 for 15 minutes.
Serves 4
I have also made this with boneless skinless chicken breasts - just adjust the bake time to 30 minutes - depending on thickness of the chicken breasts.

I think that I used a little too much of this dressing on the fish because it was a little too sweet. It was pretty good and I think that I'll try it on chicken next time. - 9/24/08

If you like the general flavor, but just a little too sweet, try using less Honey and a little more mustard. If you find it way too sweet, see my reply below to GGkids7 this may be more to your liking.

To Make this dish more savory, you might try omitting the honey & add a bit more mustard, maybe a little chilli powder to give it a little flair. Another thought might be to omit honey, add a little Soy sauce & substitute ground Sesame seads for the Almonds. I will try that one & report back.
