Cheesy Vegetable Beef Casserole

Ingredients
Broccoli - 1 cup, choppedGreen Beans - 1 cup, choppedOnion - 1/2 cup, choppedCucumber - 1/2 cup, choppedPotato - 1 Medium, choppedOlive Oil - 1 tbspKosher Salt - 1 tspBlack Pepper - 1 tbspThyme - 1 tsp, ground Oregano - 1 tsp, groundRosemary - 1 tsp, driedEgg White - 1Whole Milk - 1/4 cupPlain Greek Yogurt - 2 tbspPlain Breadcrumbs - 1/2 cupShredded Mozzarella Cheese - 1/2 cupGround Beef - 6-8 oz (optional)
Directions
Preheat oven to 350 degrees. Chop all vegetables into relatively small pieces and combine in a large bowl. Add olive oil, pepper, and salt and stir until evenly coated.

In a separate bowl, combine eggwhite and yogurt. Add milk until mixture is runny. Pour over vegetable mixture and sprinkle with 1/4 cup of bread crumbs. Mix until evenly coated. Transfer vegetable mix to a casserole dish and sprinkle top with the remaining bread crumbs. Put in oven for 25 minutes.

While it is baking, cook the ground beef however you want (I prefer putting it in a strainer and steaming it to reduce the fat content). After 25 minutes, take the dish out of the oven. Add the ground beef and incorporate with vegetables. Add the cheese on top and return to the oven for 10 minutes.
