Yummy Lean Beef Meat Loaf

* 2 lb Ground beef, extra lean (ground from beef roast)* 1/4 cup Egg Substitute* 1 cup Progresso Bread Crumbs - Italian Style* 1/3 cup chopped raw Carrots, raw* 1 cup Canned crushed Tomato* 1 tbsp Garlic powder* 1/2 cup chopped onion * 1 tsp salt * 1 tsp dried Parsley* 1/2 tsp Chili powder
1 - Preheat oven to 375 degrees F (190 degrees C)
2 - In a bowl, mix the beef, bread crumbs, egg substitute, carrots, 1/2 cup crushed tomato, garlic powder, and onion. Season with salt, parsley, and chili powder. Transfer to an 8x8 inch pan and form into a loaf shape. Top with 1/2 cup crushed tomato.
3 - Cover and bake 45 minutes in the preheated oven. Remove cover, and continue backing 15 minutes, or to an internal temperature of 160 degrees F (70 degrees C). Let sit 10 minutes before serving.
