1 cup onions, diced1/4 cup celery, diced1 tablespoon canola oil1 cup dry lentils 1 tablespoon chili powder2 teaspoons ground cumin1 teaspoon dried oregano2 cup water1/4 cup raisins, minced1 cup salsa
In a large frying pan over medium heat, sauted onions, celery, in the oil until soft. Stir in the lentils, chili powder, cumin, and oregano. Add water and raisins. Cover and cook for 20 minutes, or until the lentils are tender (add more water as needed). Remove the lid and cook an additional 10 minutes (until lentils are thick), stirring often. Fold in the salsa.
