Stovetop Sauerkraut (Not Fermented)

Ingredients
I small yellow onion1 small head of cabbage1 apple + 1/4 white vinegar OR 100% pineapple juice, pureeed together (Or substitute whole combo with apple cider)1T EVOO.5t salt1t dill seed.5t ground (dry) mustard.5C apple cider vinegar.5C water
Directions
Sautee onion in olive oil. Add thinly sliced cabbage. Mix liquids and seasonings and pour over the top of the cabbage. Bring to a boil. Reduce heat and simmer, covered, for 30-40 minutes until cabbage is tender.
