Balsamic Vinegrette marinated - Veggie Roll

Ingredients
3 tbsp Maple Grove Farms of Vermont2.5 tbsp Light Olive Oil2 tsp lime juice1 cup fresh eggplant1/3 cup zucchini slices1/2 cup green peppers3/4 cup tofu firm1/4 cup chopped red onions1/2 romaine lettuce4 tsp Basil Pesto4 Chapathis (recipe in my recipe collection)
Directions
Mix all together. Pour on the vegetables and marinade for an hour and then grill. (Use only zuchini, eggplant, green bell pepper and tofu)

Grilled vegetables yield 4 servings to roll in a chapathi.

Put a tsp of pesto on each chapathi and place 1 serving of grilled vegetables and tofu in the chapathi, add fresh chopped onion and lettuce in each chapathi and roll it and serve.
