Coconut Brown Rice (Looney Spoons Collection)

Ingredients
1 TBS olive oil2 tsp minced garlic2 tsp minced ginger root1 1/2 cup brown basmati rice3/4 cup light coconut milk11/s tsp salt1 TBS honeyzest of one lemon2 1/4 cups water
Directions
Heat olive oil in frying pan, and add garlic and ginger. Cook over med heat one minute. Add rice and cook til a bit golden...do NOT burn the garlic. Place browned rice, and all the other ingredients in a pan or rice cooker. Cook til done.
