2 oz. (dry) whole wheat fusilli, 1/2 cup raw kale leaves, choppedjuice from 1/2 lemon16 kalamata olives 12 grape tomatoes1/4 cup chopped red onion1 oz. feta cheese crumbled1 tbsp. safflower oil1 tsp. salt1/2 tsp. ground black pepper1 tsp. dried oregano
Cook the pasta according to the manufacturer's directions. Let cool. Massaged the lemon juice into the kale. Add the pasta, olives, tomatoes, onions, feta, salt, pepper and oregano. Mix. Add safflower oil and mix again.
