3 cups broccoli heads (or cauliflaur)bread crumbs made from 2 slices ww bread ends10 slices ww bread preferably stale or lightly toasted then cut into cubes3 eggs and 1/4 c egg whites(equivalent to 2 egg whites or 1 egg)1-1/4 cup milk (1%)2 tbs mild hot sauce(such as franks) salt and pepper1/4 tsp dry mustard (for broccoli) or (dash of caraway seeds for cauliflaur)1 tsp olive oil1 onion diced4 slices bacon diced1 c shredded cheese (chedder for broccoli, italian mix for cauliflaur)
steam broccoli heads til just tender about 4 min. spray deep dish pie pan coat with bread crumbs patting them down to form an even pie crust. whisk together eggs and egg whites, whisk in milk, hot sauce and salt pepper spices. stir in cubed bread coating bread evenly and put aside in fridge. preheat oven to 350F preheat med frying pan with 1 tsp oil. saute onion and bacon til just golden stirring occasionally. add bacon onion mix and broccoli to bread mixture. stir in most of the grated cheese reserving some to top. put broccoli bread mix in prepared pie pan. patting down slightly it will be a dome. top with reserved cheese. bake until done about 1 hour.
