Spanish Style Chicken

2 medium onions, large dice1 red pepper, large dice1 cubanelle pepper, large dice1 (15ounce) can diced tomatoes3 Tbsp flour1 Tbsp garlic powder1 Tbsp paprika1 tsp salt1/2 tsp pepper2 skinless boneless chicken thighs1 Tbsp olive oil2 Tbsp tomato paste1 1/5 cups chicken broth
In a slow cooker, layer onions, all peppers and tomatoes.
Mix flour, and spices together in a ziploc bag. Add chicken thighs and toss to coat. Heat oil in a large skillet. Add chicken to pan and brown on both sides. Remove chicken from skillet and add to slow cooker. Add tomato paste and chicken broth to the skillet to remove all the cooked bits on the bottom of the pan. Add this sauce to slow cooker. Cook on low for 6 hours or on high for 3 hours. Serve over rice.
