140g Quinoa flour120g Whole almonds finely ground (or just use almond flour)2 tsp baking powder (GF) .5 tsp each of ground nutmeg, ground ginger, ground cloves, & ground cinnamon190g demerara brown sugar (you can use normal brown sugar just fine).5 tsp guar guma pinch of sea salt3 medium sized over ripe bananas (mashed gently)3 eggs (beaten with a fork)1 tsp vanilla extract100g coconut oil melted (or 100ml thereabouts)
have the oven preheated to 170 degrees C. Line a loaf tin with baking paper
Mix all your dry ingredients together. In another bowl mix together your wet ingredients (the last 4 - bananas, eggs, vanilla and coconut oil)
Make a well in the dry lot, add your wet lot and mix to incorporate.
Pour into the ready and waiting loaf tin - pop into the preheated oven and await the most gorgeous not too bad for you banana loaf!
