Cauliflower Pizza Crust

Ingredients
2 1/2 cups cauliflower, steamed then grated to = 1c.1/4 cup egg substitute1 cup Part-Skim Mozzarella Cheese2 T Parmesan Cheese, shreddedoreganobasilonion powdersaltpepper
Directions
1. Preheat oven to 400.

2. Steam cauliflower in microwave until just cooked, but still firm.

3. Grate in food processor or with a hand grater. Measure out 1 cup. (I had a few Tbs. more that I just used)

4. Mix together ingredients, plus salt & pepper if desired.

5. Spoon into 4 mini pizzas & bake on a parchment lined baking sheet sprayed with non-stick spray.

6. I baked them 7 minutes, then flipped them over for another 5-7 until they felt crisped.
