Pumpkin Cranberry Protein Oatmeal

Ingredients
1.3 cups steel cut oats3.5 cups water1 cup pureed pumpkin1 cup fresh cranberries1 T Trader Joes Pumpkin Pie Spice1 cup egg whites1 T vanilla extractStevia in the Raw or Sweetener of your choice
Directions
Add water, steel cut oats, fresh cranberries and pumpkin to pot and simmer over low/med heat about 30 minutes or until water is all evaporated. Add eggs and whip until eggs are combined and cooked. Remove from heat and add vanilla. Serve with Stevia or other sweetener of your choice.
