2 Cups Almond Flour (I added 1/2 a cup more and one cup of instant oatmeal because I felt that one stick of butter tasted too buttery for me. The cookie came out very moist and almost more like a muffin.)1 cup instant oatmeal1 stick butter1 egg1/4 cup applesauce1 cup persimmon pulp3/4 cup brown sugar1 tsp baking sodaSalt, Vanilla extract, Cinnamon, cloves, ginger, and cardamom to your liking.
Mix all your dry ingredients. Mix room temperature butter with wet ingredients and combine. Bake on a greased sheet pan for 15-20 minutes in a 375 degree oven.
