Royal Banana Bread - Spelt

- 1 cup mashed overripe Bananas (3 medium bananas)- 2 cups Spelt Flour- 2 tsp Baking Powder- 1/4 tsp Baking Soda- 1/2 tsp Salt- 1/2 tsp ground Cinnamon- 1/4 tsp Allspice- 1/2 cup Canola Oil- 1/2 cup Agave Nectar- 1/2 cup liquid Egg substitute (or 2 eggs)
1 - Preheat oven to 350 degrees F. Oil a 9 x 9 x 2 baking pan (can also use 9 x 5 x 3 loaf pan).
2 - Mix together dry ingredients: spelt flour, baking powder. baking soda, salt, cinnamon, & allspice.
3 - Mash bananas in a bowl and add oil, agave, and egg substitute.
4 - Gradually mix dry ingredients into banana mixture.
5 - After all ingredients are mixed, pour into greased pan. Sprinkle some additional cinnamon on the top.
6 - Place pan in oven and bake for 45 minutes, or until done.
Serving Size: Makes 24 1/2 x 4-1/2 inch pieces
