Cabbage apple soup

Ingredients
1 tsp oil (or use saved fat from cooking beef or bacon)1/2 head cabbage sliced fine (or chopped if you prefer)3 medium apples, chopped 2 carrots, chopped1 onion, chopped or diced3 cinnamon sticks1/2 tsp pepper4 Tbsp marsala wine (or 2 Tbsp brown sugar)2 cups apple cider2 Tbsp cider vinegar3 cups veg. broth (you could use a meat broth if you like)boiling waterif you like nutmeg, use some.
Directions
heat oil on medium. saute onions, then add carrots & saute longer. then add apples and saute a bit more. (maybe 5 minutes for each addition)

meanwhile have sliced cabbage, cinnamon sticks, and pepper in a large pot or your crockpot/slow cooker.

add onion/carrot/apple mixture to cabbage. pour on veg broth, cider, wine, vinegar.

add boiling water to cover as needed.

cook 'till cabbage is tender. 2-3 hours on high, longer on low in the crockpot. or boil 15-20 mins on the stovetop in a pot.
taste and season (i.e. add salt or pepper if you like) and serve!
