1 lb. Beef Stew meat, chuck, cubed1 cup Onion, diced1 cup celery, diced1.5 cup baby carrots2 cup potatoes, cubed1 cup sweet potatoes, cubed3 cups of Beef Broth, low sodium0.5 cup Baby Bella Mushrooms, diced1 tsp. Coriander, ground1 cup of frozen peas1 Tbsp Corn Starchenough water to make a corn starch slurrySalt and pepper to taste
Combine beef stew meat, onion, celery, baby carrots, potatoes and sweet potatoes and beef broth in crock pot. Season with coriander, salt and pepper. Cook on low for 8 hours. Add frozen peas. Turn up to high. Make a slurry with corn starch and a little water. Add to bubbling stew. Continue to cook on high until slightly thickened. Serve. Makes 8, 1 cup servings.
