Ingredients
1 cup quinoa 1/4 teaspoon turmeric (optional)1/4 teaspoon black pepper 6 ounces fat-free plain Greek yogurt1 cup shredded reduced-fat sharp Cheddar2 teaspoons Dijon mustard
Directions
In a large saucepan, prepare quinoa according to package directions. Just before the quinoa has finished cooking, stir in the turmeric and pepper, and cover.
Remove from heat and immediately stir in the remaining ingredients.
Serve immediately.

    I LOVE this recipe. It was quick to make and is so delicious! I didn't have any dijon mustard so I looked up what to substitute. Ask.com said to use tumeric, garlic powder and chili powder. So I added more tumeric, and a few shakes of the other two. It was great. - 2/17/14

    Very interesting texture and flavor. I liked it and will probably make it again but I definitely added salt and I sprinkled some rosemary in it for extra flavor. I think I might add some canned tomatoes and maybe some onion next time to get some veggies in. Thanks for sharing! - 2/23/14

    Quinoa is so versatile! I add it into my oatmeal (1/2 and 1/2 with some cinnamon and splenda and it is delish! I use it as a substitute for rice in dishes as well, like stuffed peppers, etc. For those who may think it had a bad taste, if it did, you needed to wash it. Buy it prewashed, it's great! - 3/25/14

    I've used quinoa for a number of years and have introduced a number of people to it. I tell them to soak it for a couple minutes swirling it around now and again and then rince, rince, rince it like you're washing spinach! It's yummy.     This is delicious! I made it for the first time yesterday, halving the recipe and adding sautéed onion, zucinni and a couple of peppedews. I planned to take it to work for lunch twice this week.     First time making, so didn't add any veggies. I goofed up by letting the quinoa rest the norm 5 mins instead of promptly mixing in the ingredients per the recipe so cheese and yogurt cooled the whole thing a little. May decrease mustard a bit next time. - 8/23/15

    The first time I prepared it, used 2% mexican cheese blend, but it really needs the sharp cheddar. Also added some salt to the quinoa while cooking. With the salt and sharp cheddar, it's much better and makes a great side dish (generous & filling) to replace mac & cheese or potatoes - 6/14/15
