Nutrilicious Cran-Apple Muffins

Ingredients
3/4 cup white flour3/4 cup whole wheat flour1/4 cup milled flax seed1/2 tsp. baking soda2 tsp. baking powder1/2 cup pourable Splenda1 tsp. cinnamon1 Tbsp. chia seed, soaked in the 3 Tbsp water1 Tbsp. olive oil1/4 cup Egg Beaters1/2 cup plain night soy milk1 1/2 cups chopped, peeled apples2 Tbsp. unsweetened applesauce1/4 cup dried cranberries1/2 cup chopped walnuts
Directions
Preheat oven to 400* (375* convection)
Soak chia seeds in the water for about 15 minutes
Spray 12 hole muffin pan with cooking spray
Stir together dry ingredients and set aside.
Mix together remaining ingredients, except nuts and cranberries. Pour wet mixture into dry mixture and stir well. Stir in cranberries and walnuts. Spoon into muffin pan wells. Bake about 20 minutes until toothpick comes out clean and tops are golden brown.
