Cajun 15-Bean Soup

Ingredients
20 oz. Dried mixed bean 8 C. Vegetable Broth 1 Large Onion-chopped 2 Rib Celery-chopped 1 Bell Pepper-chopped 1 Clove Garlic-chopped Juice of 1 Lemon15 oz. can Stewed tomatoes 2tsp. Paprika 1tsp. Chili powder1/4tsp. Cayenne pepper1/2tsp. Oregano 1tsp. Thyme1 1/2 Salt
Directions
Place beans in water to cover over night. Drain water and put in 8 C. vegetable broth. Cook beans while cutting and browning onions,celery,bell pepper, and garlic in non-stick skillet.
Add onion mixture,stewed tomatoes,and lemon juice to beans along with spices and simmer 30-45 minutes
