Spicy Spinach Stuffed Chicken Breast

Ingredients
2 Full Boneless Skinless Chicken Breast Cajun Seasoning 5.3 oz serving of plain Greek Yogurt (slightly more than 1/2 cup)1 Cup Chopped Fresh Spinach3 Tbsp chopped Onions4 Tbsp Shredded Parmesan Cheese4 Cups Fresh Broccoli - Steamed1 Tbsp Lemon JuiceSalt Broccoli to taste
Directions
Preheat Oven to 425 Degrees.

Beat chicken breast out thin and sprinkle both sides with cajun seasoning. Personally I prefer applying seasoning liberally for added spiciness.

Mix together yogurt, spinach, onions, and parmesan cheese. Place half of mixture on each chicken breast and fold chicken in half.

Prepare cookie sheet with pam and bake chicken at 425 degrees for 20 - 25 minutes. Let chicken rest 5 minutes, then slice each breast in half to make 4 servings.

Serve with steamed broccoli seasoned with lemon juice and salt to taste.
