Amaranth stuffing

Ingredients
Amaranth Grain, 1/2 cup dry / 1 cup cookedLeeks, 1 leek - choppedCarrots, raw, 1 medium - dicedOlive Oil, 1 tbspSalt and pepper to taste
Directions
Cook the leek and carrot in a pan of salted water.
Stir together with the cooked amaranth.
Add 1 tablespoon olive oil
Season to taste.

Stuff into the cavity of a roasting bird and cook as directed.

Serving Size: Makes enough to stuff a 1kg chicken / 2 servings
