1 lb lean ground beef1 Tbsp olive oil1 med onion chopped3 cloves garlic1 cup chopped celery1 med green pepper1 med red pepper1 jalopena pepper1 cup sliced mushrooms1 lg. tin stewed tomatoes1 tsp oregano1 tsp basil1 tsp thymesalt and pepper to taste
Brown ground beef in olive oil.
Add onion, garlic, celery, peppers and mushrooms. Add seeasoning and continue cooking on med. heat for 10 mins. until vegetables are softened. Add tomatoes and simmer on low heat for 1 hr.
