Gluten-free pretzel "fried" chicken

Ingredients
3 cups gluten free pretzels1 tsp ground cumin1 tsp chipotle chili powder1 eggpepper to taste1/8 cup buttermilk1.75 lb boneless skinless chicken breast, at room temperature
Directions
Preheat oven to 425.
Pulse pretzels in a food processor with the cumin, and chile powder until mix resembles coarse crumbs.
In a medium-sized bowl, whisk together the egg, buttermilk, and a few dashes pepper.
Rinse chicken breasts in cold water and pat dry. Slice chicken into 1-2″ wide strips. Dip chicken into the egg and buttermilk mixture and then into a plate of the pretzel crumbs.
Bake at 425 for about 20 minutes, or until cooked through, turning once.
