Brie & Spinach Omelet with Ham

For Omelet:2 large eggs1 Tbsp heavy whipping cream1/8 c sauteed mushroomsFor Filling:1 oz brie1/2 c baby spinach leaves2 slices deli ham (no sugar added)
Crack eggs into a small bowl or coffee cup, add cream, and beat with a fork until well mixed. Add mushrooms and incorporate. Spray a small skillet with nonstick spray and heat to medium heat. Once heated, pour in egg mixture and cook until outside edges are set and egg is mostly cooked through. Flip omelet. Add brie cheese to one half of the omelet, top with ham and spinach. Fold the half that does not have toppings over the other half. Remove to a microwave safe plate. Microwave 30 seconds to melt cheese. Enjoy!
