Crustless Mock Apple Pie

8 oz zucchini or summer squash, peeled and sliced on a mandoline (about 2 cups)6 packets stevia with fibre (like Pyure)2 tbsp lemon juice1/2 tsp cinnamonpinch nutmegpinch salt1/4 tsp butter flavour (optional but delicious)1 tbsp panko breadcrumbs
Preheat oven to 375F.
In a small non-stick pan, saute zucchini, about 5 minutes.
Add lemon juice and cook on low heat for 2-3 minutes.
Drain, then toss with the stevia, cinnamon, nutmeg and butter flavouring (if using).
Spoon into an individual casserole dish or ramekin and top with the panko.
Bake for 10 minutes.
Serving Size: Makes 1 small casserole
