Oatmeal Pancakes

Ingredients
3/4 c. instant oatmeal1 1/2 c. nonfat milk1 c. flour1/4 tsp. baking soda1 1/2 tsp. baking powder1/4 tsp. salt1/4 tsp. ginger3/4 tsp. cinnamon1 egg, beaten1 tbsp. canola oil1 tbsp. molasses, or other sweetener
Directions
Heat the milk. Measure the oatmeal into a mixing bowl. Pour the warm milk over the oatmeal to soak for 5 minutes.
Combine the dry ingredients in a smaller bowl.
Add dry ingredients to the oatmeal, along with the sweetener, beaten egg, and oil. Stir until dry ingredients are moistened.
Drop by spoonfuls on a hot, nonstick griddle. Turn over with a spatula when bubbles begin to appear. Lightly brown and serve. Makes 12 3-inch pancakes or 6 servings of 2 pancakes.
