Tofu Shepard's Pie

Ingredients
Tofu, firm, 1 block Mixed Vegetables, frozen, 1 package (10 oz) Olive Oil, 3 tbsp Mashed Potatoes, 2 cup Mushrooms, cooked, .5 cup pieces Mushroom Gravy, 1 can Soy Sauce, 3 tbsp Cheddar Cheese, 12 oz
Directions
Using olive oil and soy sauce, crumble tofu and sautee until firm. Add mushrooms and vegetables until soft. Finally add the mushroom gravy until combined.

In a 9x13 baking pan, layer the tofu mixture on the bottom, add the baked potatoes on top, and finally add the cheddar cheese as the final layer.

Bake on 375 for 15 mins to melt the chesse and warm all the ingredients.
