Fried Egg, Mushroom and Kale Skillet

1/4 c sliced onion1/4 c sliced mushrooms2 slices bacon, chopped2 handfuls sliced kale2 eggssalt and pepper
1. In a skillet, cook the onion, mushrooms, and bacon over medium heat for about 15 min.
2. Stir in the sliced kale and cover. Saute for a minute or two.
3. Make two small wells in the kale and crack the egg into the wells. Season to taste with salt and pepper. Cover and cook for five to ten minutes on low, depending on how you like your eggs.
