Broccoli With Honey-Mustard Dressing

1 c. broccoli cleaned and cut into small floweretes1-1/2 c. water2 tsp. Dijon mustard1 tbsp. honey1 tbsp. vinegar (rice wine vinegar is fine)2 tbsp. olive oil1 tsp. black pepper or to taste
Whisk together the mustard and honey; whisk in the vinegar and then the olive oil. Season with some black pepper. Set aside. Bring a pan of water to a boil. Add the broccoli and time about 4 minutes, until the broccoli is tender. Drain well. Immediately rinse with cold water to stop the cooking. Wrap in paper towels to get rid of the excess moisture before tossing in the dressing.
