Crustless Salmon Spinach Quiche

Ingredients
11 extra large eggs1/2 c milk4 cups spinach, sliced4 tbsp chopped green onion or fresh chives1 tin (213 g) red sockeye salmon, drained2 tbsp grated parmesan cheese3 oz grated sharp white cheddar cheesepepper to taste
Directions
Preheat oven to 350F.

Spray a large quiche dish with cooking spray.

Spread the spinach evenly over the bottom of the dish, followed by the green onions or chives.

In a large bowl, beat the eggs, milk, parmesan cheese and pepper with a fork, until the eggs are frothy and there are no whole yolks.

Mash the salmon and break up any bones or skin, add to the egg mixture and stir until well blended.

Pour over the spinach in the quiche dish. Sprinkle the grated cheddar on top.

Bake at 350F for approx 40 minutes or until a knife comes out clean.
