Ingredients
beef chuck 3lbonion raw `1garlic cloves chop into samll pices 2bell pepper 1 largewater 1colive oil or any oil 2 tbsground ginger 1 tbs (optional)ground cummin .5 tbssalt to tastechicken bullion ( magi) 2 envelopescan tomatoes whole or chop 3 cansblack pepper to tasteabout 3 tbs all purpose flour for making gravy thick a little
Directions
chop beef, onions, bell pepper in to small squares.
cook beef , onion,bell pepper and garlic in oil until the meat is browned and the onion is tender. Add flour, stiring to blend it with the pan juices. Add the water, tomatoes, salt , pepper, magi, ginger, and cumin and simmer for 45 minute. serve as a main dish with spanish rice or with flour tortillas.

    This is an awesome recipe, but to make the meat as tender as in South Texas-Mexican dishes, I let the meat simmer in water taht just covered it for 2-3 hours. Delicioso! - 4/30/08
