My Favorite Potatoes

Ingredients

8 cups potatoes, peeled and cubed1/2 cup milk1 Tbsp butter1 cup chopped green onions2oz shredded sharp white cheddar cheese4 slices turkey bacon, cooked and crumbled
Boil potatoes in salted water for 30-45 minutes until falling apart. While hot, transfer to a 8x8 baking dish. Add milk and butter (heat from potatoes will melt butter), and gently mash.
Stir in onions, cheddar cheese, and bacon. Serve immediately, or this can be made ahead of time, and placed in a 350 oven for 15 minutes before serving.
Divide into 4 for 4 servings.
Serving Size: Makes 4 heaping servings - about 2 cups each
