Vegan Chocolate Cake

3 C Flour2 C Sugar2/3 C sifted Cocoa Powder2 t Baking Soda1 t Salt2 C Water2/3 C Vegetable Oil2 T White Vinegar1 T Vanilla Extract
1. Preheat oven to 350 degrees & spray pans with non-stick spray (even silicone!)
2. Whisk dry ingredients together thoroughly.
3. Add wet ingredients and whisk until combined.
4. Divide batter evenly between cake pans.
5. Bake 30 - 35 minutes until a toothpick comes out with a few wet crumbs.
6. Cool cakes in pans on wire racks for 10 minutes.
7. Unmold cakes onto wire racks to cool completely.
Serving Size: makes 2 - 9" cakes
