P90X Miso Soup

Ingredients
½ tsp dark sesame oil1/3 c shallots, finely chopped3 tbs yellow miso1 qt vegetable stock1/4 c firm silken tofu, diced3 tbs scallions for garnish
Directions
Heat sesame oil in saucepan over medium heat, add the shallots and cook until translucent.
Add the miso paste and mix well. Add vegetable stock and bring to a shimmer. Reduce heat to low and simmer for 15 minutes. To serve, ladle into bowls and garnish each serving with tofu and scallions. If desired add protein powder just before serving.
