Chicken Curry Barley Risotto

Ingredients
1 medium onion, chopped3 cloves garlic, chopped1 cup carrots, chopped1 cup mushrooms, chopped1 cup red bell pepper, chopped14 oz chicken breast2 tbsp olive oil6 cups beef broth2 tbsp curry powder2 cups pearled barley
Directions
Large flat pan heated on the stove. Olive oil added followed by onion, mushroom and carrot. Sauté for a few minutes then add garlic and pearled barley. Add a couple cups of broth and cook down. Slowly add broth with stirring now and then for about 20 minutes. Add chicken and peppers near the end and cook until thick, creamy and chicken is cooked through.
