Slow Cooker Wild Rice Soup

Ingredients
1 c wild rice, dry1 cup shredded raw carrot12 cups water6 tsps. chicken boullion or more to taste2 lb boneless skinless chicken breasts cut into small 1/2 in pieces1 c chopped celery1 c chopped onion12-15 oz spinach leaves, fresh, whole (you can add package 10oz frozen, thawed in necessary) 1 c fat free sour cream1/2 c flour
Directions
Stir togehter al ingredients except spinach, sour cream and flour in slow cooker. Cover; cook on LOW for 8-10 hours or until chicken and rice are tender. Just before serving, stir together in a medium size bowl sour cream, flour and about 2-3 cups of the broth from the slow cooker, add mixture into crockpot mixture stirring until smooth. Increase heat to high, add in spinach and cook 6-10 min. until spinach soft, stirring occasionally. The batch makes about 20 cups of soup.
