Low Fat Banana Oatmeal Bread

Ingredients
1 1/4 cup flour1/4 cup Splenda Brown Sugar Blend1/2 tsp salt1/2 tsp baking soda1/4 tsp baking powder1 tbls canola oil1 large egg (beaten)2 large egg whites (beaten)3 bananas (medium to large)1 cup dry oatmeal
Directions
Preheat oven to 350. Stir together dry ingredients. Add oil and eggs and mix thoroughly. Mash bananas in separate bowl. Add bananas and oatmeal and mix well. Pour batter into sprayed loaf pan and bake until loaf top is firm to touch, 45 to 55 minutes. Remove from oven and cool in pan for about 5 minutes. Take out of pan and cool on wire rack for another 10 minutes.

    I replaced 1/2 cup of the flour with whole wheat flour which usually causes my breads to be more dense. Still a good taste with a relatively low amount of sugar (I also do not use Splenda). - 4/19/09
