LOW SALT SPANISH RICE & RONI WITH CHICKEN

Ingredients
Box of Spanish Rice a Roni, discard the seasonings1/2 TB extra virgin olive oil1 can Hunts no salt diced tomatoes with basil, garlic, oregano2 cups water12 oz cooked chicken breast (I used the salsa chicken)2 TB Pace Picante Sauce, HotMcCormick Southwest salt free sweet n savory to taste
Directions
heat oil in large pan, add rice & vermicelli and stir to brown. Add can of tomatoes and 2 cups water. bring to boil and simmer for 10 minutes. Stir in shredded chicken and Southwest spices. continue cooking until all is warm and rice is done. Add Pace Picante at the end to season.
