Artichokes, frozen and thawed, 1 package (9 oz)*Potato, raw, 1 medium peeled and chopped (2-1/4" to 3-1/4" dia.)Swanson Chicken Broth 99% Fat Free, 4 cupsCarrots, raw, chopped - 3 mediumSpinach chopped, fresh, 1 package (10 oz)*Vidalia onion, raw 1 medium onion, choppedThyme, fresh chopped, 3 tsp*Onion powder, 1 tbspSalt, 2 tspPepper, black, 1 tsp*Chicken boullion cube - 2 cubes*Lemon Juice, 1/2 lemonNutmeg, ground, .25 tsp*Extra Virgin Olive Oil, 1 tbspGarlic, 1 clove mincedFresh Chives, 6 tbsp chopped for garnish
Sautee onion, garlic, carrots, salt, pepper, onion powder, and potatoes in olive oil until softened.
Add artichokes and herbs and saute another 2-3 mins then add boullion cubes, chopped fresh spinach, and chicken broth. Cook about 30 mins or until all veggies are cooked and softened.
Puree using an immersion blender or in batches using a blender. When all is smooth and combined, turn heat to medium low and add lemon and nutmeg. More salt and pepper to taste. Bring to just a simmer and serve with a sprinkle of chopped chives on top.
