Cheesy Bacon Acorn Squash

Ingredients
1 acorn squash, halved and seeded3 T butter1 c. diced celery1 c. finely chopped onion1 c. fresh mushrooms, sliced8 pieces turkey bacon, cooked and crumbled1/4 c. frozen spinach, thawed and drained1/8 tsp salt1 pinch ground black pepper1 tsp chopped parsley1/4 c. shredded cheddar
Directions
Preheat oven to 350 F. Place squash cut side down in a glass dish. Cook in microwave for 20 mins on high, until almost tender. In a saucepan over medium heat, melt butter and add celery and onion; saute until transparent. Stir in mushrooms; cook 2-3 mins more. Add bacon and spinach; stir until well mixed. Sprinkle with salt, pepper, and parsley. Divide mixture in half, spoon into the squash, and cover. Bake 15 mins in the preheated oven. Uncover, sprinkle with cheese, and put back in the oven until the cheese bubbles, about 5-7 mins.

Serving Size: Makes 2 servings (1/2 squash each)
