Braised Chicken and Lentils

1 tbsp olive oil4 bone-in chicken thighs, skin removed2 onions, chopped1 red pepper, chopped3 cloves of garlic, minced1 tbsp smoked paprika1 tsp saffron1 cup lentils, picked through and rinsed2 cups chicken stock1 large can chopped tomatoessalt and pepper to taste
Heat oil in heavy, high-sided skillet over medium heat. Salt and pepper the chicken. Add chicken; cook 10 minutes or until browned and no longer pink in center, turning once.
Remove chicken and set aside. Saute onion and pepper until softened (about 5 minutes). Add garlic, paprika and saffron and stir until fragrant (1 minute).
Add lentils, chicken broth and tomatoes. Bring to a boil over high heat.
Nestle chicken into lentil mixture in pan. Cover; simmer 40 to 45 minutes until liquid is absorbed and lentils are tender. Check periodically. Adjust seasonings as needed.
Serving Size: 1 thigh and about 1c mixture
