1/2 tsp coconut oil1/4 cup diced onion1 tsp minced garlic2 baby bella mushrooms2/5 block extra firm tofu1/2 cup fresh baby spinach2 tbsp nutritional yeast1/8 tsp tumeric1/8 tsp cumin1/8 tsp garlic powdersaltpepper1/4-1/2 cup water
Put the coconut oil, garlic and onion in a saute pan over medium heat. Stir occasionally as you slice the mushrooms and crumble the tofu. Add the mushrooms to the pan and let them cook down.
Meanwhile, in a small bowl mix the nutritional yeast, tumeric, cumin, garlic powder, salt and pepper with the water and whisk to combine.
When the mushrooms are tender, add the tofu to the pan. Let it cook for 4-5 min and then add the spice mix. Add the spinach. When the water has evaporated, you're ready to eat!
