Zucchini Tots

Ingredients
One cup shredded zucchini1/4 cup shredded cheddar cheese1/4 cup bread crumbs1/4 cup Egg BeatersBeaters1/4 of an onion, choppedSaltPepper
Directions
Preheat oven to 400 degrees F. Shred the zucchini. Squeeze out excess water using a dish towel, or paper towels. Mix all ingredients in a large bowl. Spoon mixture into a mini muffin tin, sprayed with cooking spray. Press down on the tops of each to help them stay together when you remove them from the pan. Bake 15 to 20 minutes, or until golden brown. Use a plastic knife around the edges od each tot to help loosen them. Enjoy!!!!
