Flax Blueberry Muffins

Ingredients
1 TBSP Ground Flax seed1 CUP Blueberries, fresh1 CUP Quick Oats1 CUP Milk (Calorie content is with 2% Milk)1 TBSP Lemon Juice1 CUP Whole Wheat FLour 1 TSP Baking Powder1/2 TSP Baking Soda1/4 TSP Cinnamon1 TSP Salt1 lg egg1/4 CUP Applesauce, unsweetened3/4 CUP Brown Sugar
Directions
Preheat oven to 375 degrees

Wash and dry berries.

In a small bowl mix milk and lemon juice then stir in oats. Allow to set 5 minutes.

In med. bowl combine flour, baking powder, baking soda, salt and cinnamon.

In large bowl and using an electric mixer, mix egg, applesauce and brown sugar for 3 minutes on med. speed. Mix in oat mixture. Then stir in flour mixture. Fold in berries.

Fill muffin cups 3/4 full. Bake 15 minutes or until toothpick inserted comes out clean.
