Ingredients:Atlantic Salmon (fish), 16 oz kale - Glory chopped kale, fresh, 8 cup Cauliflower, cooked, 2 cup (1" pieces) Lime Juice, 1 lime yields Dill weed, fresh, 0.25 cup sprigs Coconut Oil, 2 tbsp Brown rice (1 cup cooked), 1 serving
cook fish in skillet, do not overcook. squeeze lime on top of fish, then add 1 tbsp of coconut oil to the fish. add kale and cauliflower to a pot with a small amount of water in the bottom, steam it until tender. Do not overcook kale. add 1 tbsp coconut oil to the kale and toss. cook brown rice according to the directions. toss with kale. serve fish and kale mixture side by side.
