Chicken gnocchi (similar to Olive Garden)

Ingredients
1 carton chicken broth, 99% fat free (4 cups)1/2 cup diced carrots1 cup diced onion1 cup diced celery1 tbsp olive oil1 garlic clove minced1 cup chopped spinach1/2 cup fat free half and half6 oz. cooked chicken breast, diced1/2 package of whole wheat gnocchi, cooked
Directions
Saute onions, celery, carrots, and garlic in olive oil. Add 4-5 tbsp flour to coat veggies, add chicken broth and simmer to thicken. Add cooked, diced chicken breast, half and half, and cooked gnocchi. Salt and pepper to taste. Simmer on low for 30-40 min. Soup will be creamy. Serve with side of bread or salad. Freeze in individual containers for quick lunch.
