Creamy Cheese Pasta

1/2 lb angel hair pasta1 tbsp extra-virgin olive oil3 plum tomatoes, diced2 garlic cloves, crushed through a press1 bag baby spinach1 c part skim ricotta cheese1 c shredded part skim mozzarella cheese1/2 tsp salt
Makes 4 1 1/4 c servings.
1. Dice tomatoes and crush garlic through a press.
2. Cook the capellini according to package directions. Drain, reserving 1/4 c. of the cooking liquid.
3. While pasta is cooking, heat the oil in large nonstick skillet over medium-high heat. Add the tomatoes and garlic. Cook, stirring frequently, until the tomatoes are softened. Add the spinach in batches, stirring just until the batch is wilted.
4. Add the capellini, reserved cooking liquid, cheeses and salt. Cook, stirring frequently, until the cheeses are melted.
